General Topology, chapter IX, § 6. Polish spaces, Souslin spaces, Borel sets

Every open subspace of a Polish space is Polish.

Let XX be a Polish space, let dd be a metric on XX compatible with its topology, and let U≠XU \neq X be an open subset of XX. Let VV be the subset of R×X\mathbf{R} \times X consisting of all points (t,x)(t, x) such that

t⋅d(x,X−U)=1; t \cdot d(x, X - U) = 1;
VV is closed by Proposition 3 of § 2, no. 2 and is therefore Polish (Proposition 1). Since the restriction to VV of the projection pr2:R∖X→X\mathrm{pr}_2 : \mathbf{R} \setminus X \to X is a homeomorphism of VV onto UU (§2,§ 2, no. 2, Proposition 3), UU is a Polish subspace of XX.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
