Commutative Algebra, chapter X, § 1. Profondeur

Let AA be a noetherian ring satisfying the following conditions: (i) for every minimal prime ideal p\mathfrak{p} of AA, the ring ApA_{\mathfrak{p}} is reduced; (ii) for every prime ideal p\mathfrak{p} of AA of height 1, the ring ApA_{\mathfrak{p}} is integrally closed; (iii) for every prime ideal p\mathfrak{p} of AA of height ⩾2\geqslant 2, one has prof⁡(Ap)⩾2\operatorname{prof}(A_{\mathfrak{p}}) \geqslant 2.

Then AA is normal.

It is a question of proving that the ring ApA_{\mathfrak{p}} is integrally closed for every p∈Spec⁡(A)\mathfrak{p} \in \operatorname{Spec}(A), which we shall do by induction on ht⁡(p)\operatorname{ht}(\mathfrak{p}). For ht⁡(p)⩽1\operatorname{ht}(\mathfrak{p}) \leqslant 1 this follows from assumptions (i) and (ii). Suppose therefore that one has ht⁡(p)⩾2\operatorname{ht}(\mathfrak{p}) \geqslant 2 and that AqA_q is integrally closed for every prime ideal qq of AA of height <ht⁡(p)< \operatorname{ht}(\mathfrak{p}). By assumption (iii), one has prof⁡(Ap)⩾2\operatorname{prof}(A_{\mathfrak{p}}) \geqslant 2. By the induction hypothesis and cor. 3 of th. 3 of No. 9, applied to the ring ApA_{\mathfrak{p}} and to the closed subset {pAp}\{\mathfrak{p}A_{\mathfrak{p}}\} of Spec⁡(Ap)\operatorname{Spec}(A_{\mathfrak{p}}), the ring ApA_{\mathfrak{p}} is an integral domain. Let KK be its field of fractions and let BB be a subring of KK, containing ApA_{\mathfrak{p}} and finite over ApA_{\mathfrak{p}}. It is a question of proving that BB is equal to ApA_{\mathfrak{p}}. Let us denote by ii the canonical injection of ApA_{\mathfrak{p}} into BB. Since BB is contained in KK, it is a torsion-free ApA_{\mathfrak{p}}-module, hence of depth ⩾1\geqslant 1. Moreover, for every prime ideal qq of ApA_{\mathfrak{p}} distinct from pAp\mathfrak{p}A_{\mathfrak{p}}, the homomorphism iq:(Ap)q→Bqi_q : (A_{\mathfrak{p}})_q \to B_q is bijective since AqA_q is integrally closed. By lemma 4 of No. 9, applied to the closed subset F={pAp}F = \{\mathfrak{p}A_{\mathfrak{p}}\} of Spec⁡(Ap)\operatorname{Spec}(A_{\mathfrak{p}}), the homomorphism ii is bijective, which completes the proof of the theorem.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
