Commutative Algebra, chapter X, § 1. Profondeur

Let AA be a noetherian ring, FF a closed subset of Spec(A)\mathrm{Spec}(A), UU the complementary open set. Suppose that profF(A)\mathrm{prof}_F(A) is ⩾2\geqslant 2 (resp. ⩾1\geqslant 1) and that, for every p∈Up \in U, the ring ApA_p is integrally closed (resp. reduced). Then AA is normal (resp. reduced).

For every p∈Fp \in F, one has prof(Ap)⩾profF(A)\mathrm{prof}(A_p) \geqslant \mathrm{prof}_F(A) (No. 5, Prop. 8); it is therefore enough to apply the preceding remark.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
