Lie Groups and Lie Algebras, chapter VII, § 2. Cartan subalgebras and regular elements of a Lie algebra

Let C∞g\mathscr{C}_{\infty}\mathfrak{g} be the union of the ascending central series of the Lie algebra g\mathfrak{g} (Chap. I, §1, no. 6). The Cartan subalgebras of g\mathfrak{g} are the inverse images of the Cartan subalgebras of g/C∞g\mathfrak{g}/\mathscr{C}_{\infty}\mathfrak{g}.

Indeed, the centre of g/Cig\mathfrak{g}/\mathscr{C}_i\mathfrak{g} is Ci+1g/Cig\mathscr{C}_{i+1}\mathfrak{g}/\mathscr{C}_i\mathfrak{g}, and the corollary follows immediately from Prop. 5 by induction.

Bourbaki sets the proof directly after the statement, and the corpus does not separate them, so what is above is the statement and its proof together.
