Théories spectrales, chapter I, § 6. Algèbres stellaires

The mapping f↦f(x)f\mapsto f(x) is the unique unital morphism of involutive algebras from C\mathscr{C} (SpA(x)_A(x)) into A such that the identity mapping zz of SpA(x)_A(x) has image xx.

In fact, the unital subalgebra of C\mathscr{C} (SpA(x)_A(x)) generated by the elements zz and z‾\overline{z} of C\mathscr{C}(SpA(x)_A(x)) is dense in C\mathscr{C} (SpA(x)_A(x)) (TG, X, p. 40, cor. 1). Since every morphism of involutive algebras from C\mathscr{C} (SpA(x)_A(x)) into A is continuous (I, p. 104, prop. 2), there exists at most one morphism of involutive algebras from C\mathscr{C}(SpA(x)_A(x)) into A which maps zz to xx.

The following corollary shows that when ff is the restriction of a holomorphic function in a neighbourhood of SpA(x)_A(x), the definition of f(x)f(x) coincides with that of the holomorphic functional calculus in one variable of No. 9 of I, p. 74.

Bourbaki sets the proof directly after the statement, and the corpus does not separate them, so what is above is the statement and its proof together.
