Algebra, IV, p. 21, § 3. Rational fractions

Let L be a commutative field, K a subfield of L, x=(xi)i∈Ix = (x_i)_{i \in I} a family of elements of L, M the set consisting of the xix_i, U the set of all f∈K((Xi)i∈I)f \in K((X_i)_{i \in I}) such that x is substitutable in ff and φ\varphi the homomorphism f↦f(x)f \mapsto f(x) of U into L. Then φ(U)\varphi(U) is the subfield of L generated by KUMKUM.

Let L' be the subfield of L generated by KUMKUM. We have

K∪M⊂φ(U)⊂L′ K \cup M \subset \varphi(U) \subset L'
and φ(U)\varphi(U) is a subring of L. Now Prop. 2 implies that φ(U)\varphi(U) is a subfield of L, whence φ(U)=L′\varphi(U) = L'.

Let f∈K((Xi)i∈I)f \in K((X_i)_{i \in I}) and let (gi)i∈I(g_i)_{i \in I} be a family of elements of K((Yl)l∈L)K((Y_l)_{l \in L}). If (g_i) is substitutable in f, then f((g_i)) is an element of K((Y_l)_{l \in L}). In particular, (X_i)_{i \in I} is substitutable in f and f = f((X_i)_{i \in I}).

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
