Algebra, chapter V, § 14. Transcendental extensions

— Let E be an extension of the field K. For a subset S of E to be algebraically free over K it is necessary and sufficient that for each x \in S, the element x should be transcendental over the field K(S - {x}).

The condition is necessary by Prop. 4.

To prove the sufficiency it is enough (Prop. 3) to show that every finite sequence (x1,...,xn)(x_1, ..., x_n) of distinct elements of SS is algebraically free. Now by hypothesis xix_i is transcendental over K(x1,...,xi−1)K(x_1, ..., x_{i-1}) for 1≤i≤n1 \leq i \leq n, and now our assertion follows by induction on nn from the Cor. to Prop. 4.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
