General Topology, chapter IX, § 6. Polish spaces, Souslin spaces, Borel sets

A subspace YY of a Polish space XX is Polish if and only if YY is the intersection of a countable family of open sets in XX.

The sufficiency of the condition follows immediately from Propositions 2 and 3. To show necessity, let dd be a metric compatible with the topology of YY and with respect to which YY is complete. Let Y‾\overline{Y} be the closure of YY in XX. For each integer n>0n > 0, let YnY_n be the set of all x∈Y‾x \in \overline{Y} which have an open neighbourhood UU such that the diameter of U∩YU \cap Y (with respect to the metric dd) is ≤1/n\leq 1/n. Clearly YnY_n is open in Y‾\overline{Y} and contains YY. Let x∈⋂nYnx \in \bigcap_n Y_n; then x∈Y‾x \in \overline{Y}, and the trace on YY of the neighbourhood filter of xx in XX is a Cauchy filter (with respect to dd); hence this filter converges to a point of YY, and thus x∈Yx \in Y. Hence Y=⋂nYnY = \bigcap_n Y_n.

For each nn, let HnH_n be an open subset of XX such that Hn∩Y‾=YnH_n \cap \overline{Y} = Y_n, and let (Um)(U_m) be a sequence of open subsets of XX such that Y‾=⋂mUm\overline{Y} = \bigcap_m U_m (§ 2, no. 5, Proposition 7); then YY is the intersection of the countable family of open sets (Hn∩Um)(H_n \cap U_m).

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
