General Topology, chapter IX, § 6. Polish spaces, Souslin spaces, Borel sets

A space XX is Polish if and only if it is homeomorphic to a countable intersection of open sets in the cube IN\mathbf{I}^{\mathbf{N}}, where I\mathbf{I} is the interval [0,1][0, 1] of R\mathbf{R}.

The condition is clearly sufficient, and it is necessary because every metrizable space of countable type is homeomorphic to a subspace of IN\mathbf{I}^{\mathbf{N}} (§ 2, no. 8, Proposition 12).

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
