Algebra, chapter IX, § 7. Formes hermitiennes et corps ordonnés

Suppose that the conditions of No. 3 are satisfied. Let uu be a hermitian endomorphism of EE and let ∏i=1n(X−λi)\prod_{i=1}^n (X-\lambda_i) be the decomposition into linear factors of its characteristic polynomial; suppose λi⩾λi+1\lambda_i \geqslant \lambda_{i+1} for 1⩽i⩽n−11 \leqslant i \leqslant n-1.

a) Now prove that the greatest (resp. the least) of the eigenvalues λi\lambda_i in KK is equal to the greatest (resp. the least) of the values of Φ(u(x),x)\Phi(u(x), x) when xx ranges over the set of the x∈Ex \in E such that Φ(x,x)=1\Phi(x, x) = 1. (Reason directly, or apply Exercise 16 c) by reducing to the case where A=K(i)A = K(i) (§3§ 3, Exercise 4).)

b) Let Ψv\Psi_v be the restriction to a vector subspace VV of EE of the hermitian form Ψ′\Psi' associated with uu, and let uvu_v be the hermitian endomorphism of VV associated with Ψv\Psi_v. Now prove that λk\lambda_k is the smallest of the largest eigenvalues of the uvu_v, when VV runs through the set of vector subspaces of EE of dimension n−k+1n-k+1 (use prop. 5).

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
