Lie Groups and Lie Algebras, chapter VII, Appendix 1. Polynomial maps and Zariski topology

Assume that kk is algebraically closed. Let f:V→Wf: V\rightarrow W be a dominant polynomial map. The image under ff of any dense open subset of V contains a dense open subset of W.

It suffices to prove that, for every non-zero element φ\varphi of AV,f(Vφ)A_V,f(V_{\varphi}) contains a dense open subset of W. Identify AWA_W with a subalgebra of AVA_V by means of the homomorphism associated to ff. There exists a non-zero element ψ\psi of AWA_W such that every homomorphism w:AW→kw: A_W\rightarrow k which does not annihilate ψ\psi extends to a homomorphism v:AV→kv: A_V\rightarrow k which does not annihilate φ(\varphi (Commutative Algebra, Chap. V, §3, no. 1, Cor. 3 of Th. 1). Now such a ww (resp. vv) can be identified with an element of WψW_{\psi} (resp. of VφV_{\varphi}) and to say that vv extends ww means that f(v)=wf(v) =w. Hence, Wψ⊂f(Vφ)W_{\psi}\subset f(V_{\varphi}). Q.E.D.

Let f:V→Wf: V\rightarrow W be a polynomial map, and x0∈Vx_0\in V. The map h→f(x0+h)h \rightarrow f(x_0+h) from V to W is polynomial. Decompose it into a finite sum of homogeneous polynomial maps:

f(x0+h)=f(x0)+D1(h)+D2(h)+⋯ f(x_0+h) =f(x_0) + D_1(h) + D_2(h) +\cdots

where Di:V→WD_i: V\rightarrow W is homogeneous of degree i(i(Algebra, Chap. IV, §5, no. 10, Prop. 19). The linear map D1D_1 is called the tangent linear map of ff at x0x_0. We denote it by Df(x0)Df(x_0).

Bourbaki sets the proof directly after the statement, and the corpus does not separate them, so what is above is the statement and its proof together.
