Lie Groups and Lie Algebras, chapter IX, § 5. Conjugacy classes

Denote by greg\mathfrak{g}_{reg} the set of regular elements of g\mathfrak{g} (Chap. VII, §2, no. 2, Def. 2) and put treg=t∩greg\mathfrak{t}_{reg}=\mathfrak{t}\cap \mathfrak{g}_{reg}. For x∈tx\in \mathfrak{t}, we have

det(X −- adgx_{\mathfrak{g}}x) =Xdim∏α∈R(G,T)t(X−δ(α)(x))= X^{dim}\prod_{\alpha\in R(G,T)}^{\mathfrak{t}}(X-\delta (\alpha )(x)),

and hence treg\mathfrak{t}_{reg} is the set of elements xx of t\mathfrak{t} such that δ(α)(x)≠0\delta (\alpha )(x)\not= 0 for all α∈R(G,T)\alpha \in R(G,T), that is the union of the chambers of t\mathfrak{t} (so tr⊂treg\mathfrak{t}_r\subset \mathfrak{t}_{reg}). Consequently C∩treg=CC\cap \mathfrak{t}_{reg}= C, so we have homeomorphisms

C→treg/W→greg/C\rightarrow \mathfrak{t}_{reg}/W\rightarrow \mathfrak{g}_{reg}/Ad(G).

Bourbaki sets the proof directly after the statement, and the corpus does not separate them, so what is above is the statement and its proof together.
