Algebra, chapter I, § 9. Fields

Let A\mathbf{A} be a ring and aa a two-sided ideal of A\mathbf{A}. For the ring A/a\mathbf{A}/a to be a field, it is necessary and sufficient that aa be a maximal left ideal of A\mathbf{A}.

The left ideals of A/a\mathbf{A}/a are of the form b/ab/a where bb is a left ideal of A\mathbf{A} containing aa (§8§ 8, no. 8, Corollary to Proposition 5). To say that A/a≠0\mathbf{A}/a \neq 0 means that a≠Aa \neq \mathbf{A}. Under this hypothesis, A/a\mathbf{A}/a is a field if and only if the only left ideals of A\mathbf{A} containing aa are aa and A\mathbf{A} (Theorem 1), whence the corollary.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
