Commutative Algebra, chapter IX, § 2. Anneaux de Cohen

Let A be a separated and complete local ring, whose residue field is of characteristic p. A Cohen subring of A means a subring C of A which is a pp-ring such that A=mA+CA = m_A + C (i.e. A/mA=C/(mA∩C)A/m_A = C/(m_A \cap C)).

If C is a Cohen subring of A, the ideal mA∩Cm_A \cap C of C is maximal, hence equal to pCpC. The canonical mapping of κC=C/pC\kappa_C = C/pC onto κA=A/mA\kappa_A = A/m_A is therefore a field isomorphism.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
