Commutative Algebra, chapter IX, Appendix 0.

Let P∈A[X]P \in A[X] be a monic polynomial whose image P‾\overline{P} in κA[X]\kappa_A[X] is irreducible. Then the AA-algebra B=A[X]/(P)B = A[X]/(P) is local and finite over AA, with maximal ideal mABm_A B, the canonical homomorphism ρ:A→B\rho : A \to B is local and flat, the residual extension κA→κB\kappa_A \to \kappa_B is algebraic and generated by the class xx of XX, and the minimal polynomial of xx over κA\kappa_A is P‾\overline{P}.

Since the polynomial PP is monic, the AA-module BB is free of finite type (A, IV, p. 10). The ring B/mABB/m_A B is identified with κA[X]/(P‾)\kappa_A[X]/(\overline{P}), and therefore is a field; hence the ideal mABm_A B is maximal. Let qq be a maximal ideal of BB; then the ideal ρ−1(q)\rho^{-1}(q) is maximal (V, § 2, no 1, prop. 1); hence we have ρ−1(q)=mA\rho^{-1}(q) = m_A, whence q⊃mABq \supset m_A B and finally q=mABq = m_A B. Thus the ring BB is local. Lemma 1 follows at once.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
