Commutative Algebra, chapter IX, Appendix 0.

Every field extension is an inflation. Let indeed K be an extension of a field k. Let us furnish K with a well-ordering for which 0 is the greatest element, and for λ∈K\lambda \in K, let KλK_\lambda be the sub-kk-extension of K generated by the elements β\beta of K such that β<λ\beta < \lambda. The verification of conditions a), b), c), for k,Kk, K and the family (Kλ)λ∈K(K_\lambda)_{\lambda \in K}, is immediate.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
