Commutative Algebra, chapter IX, Appendix 0.

Let A be a local ring, and I a set of indices. Denote by A[(Xi)i∈I]A[(X_i)_{i \in I}] the local ring of the polynomial ring A[(Xi)i∈I]A[(X_i)_{i \in I}] at the prime ideal mAA[(Xi)i∈I]m_A A[(X_i)_{i \in I}]. The A-algebra A[(Xi)i∈I]A[(X_i)_{i \in I}] is an inflation of A. In fact, furnish the set I with a well-ordering; let Λ\Lambda be the well-ordered set obtained by adjoining to I a greatest element ω\omega. For i∈Ii \in I, identify A[(Xj)j<i]A[(X_j)_{j < i}] with a subalgebra BiB_i of B=A[(Xi)i∈I]B = A[(X_i)_{i \in I}], and put Bω=BB_\omega = B. The family (Bλ)λ∈Λ(B_\lambda)_{\lambda \in \Lambda} satisfies conditions a), b), c).

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
