Algebra, chapter IV, § 6. Symmetric functions

— Let s1,s2,…,sns_1, s_2, \ldots, s_n be the elementary symmetric polynomials in X1,…,XnX_1, \ldots, X_n. For every rational fraction g∈K(S1,S2,…,Sn)g \in K(S_1, S_2, \ldots, S_n) the sequence (s1,s2,…,sn)(s_1, s_2, \ldots, s_n) is substitutable in gg and the mapping g↦g(s1,s2,…,sn)g \mapsto g(s_1, s_2, \ldots, s_n) is an isomorphism of K(S1,S2,…,Sn)K(S_1, S_2, \ldots, S_n) onto the field of symmetric rational fractions in X1,…,XnX_1, \ldots, X_n.

This follows from Prop. 2 and Th. 1 of IV, p. 62.

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
