Algebra, V, p. 58, § 10. Galois extensions

Let F=K(X1,...,Xn)F = K(X_1, ..., X_n) be the field of rational fractions in nn indeterminates X1,...,XnX_1, ..., X_n with coefficients in KK. Put

sk=∑1≤i1<...<ik≤nXi1...Xik s_k = \sum_{1 \leq i_1 < ... < i_k \leq n} X_{i_1} ... X_{i_k}
for 1≤k≤n1 \leq k \leq n and E=K(s1,...,sn)E = K(s_1, ..., s_n); we denote by f(T)f(T) the polynomial
Tn−s1Tn−1+⋯+(−1)nsn. T^n - s_1 T^{n-1} + \cdots + (-1)^n s_n .
We have f(T)=∏i=1n(T−Xi)f(T) = \prod_{i=1}^n (T - X_i), so that FF is a splitting field of the separable polynomial f(T)∈E[T]f(T) \in E[T]. Further, for every permutation a∈Sna \in \mathfrak{S}_n there exists a unique KK-automorphism hah_a of FF such that ha(Xi)=Xa(i)h_a(X_i) = X_{a(i)} for 1≤i≤n1 \leq i \leq n; we have ha(sk)=skh_a(s_k) = s_k for 1≤k≤n1 \leq k \leq n, hence hah_a is an EE-automorphism of FF. In other words, FF is a Galois extension of EE and the restriction to the set of roots {X1,...,Xn}\{ X_1, ..., X_n \} of f(T)f(T) defines an isomorphism of Gal(F/E)\mathrm{Gal}(F/E) onto the group Sn\mathfrak{S}_n. In particular, EE consists of rational fractions ff such that
f(Xσ(1),...,Xσ(n))=f(X1,...,Xn) f(X_{\sigma(1)}, ..., X_{\sigma(n)}) = f(X_1, ..., X_n)
for every σ∈Sn\sigma \in \mathfrak{S}_n (cf. IV, p. 67, Cor.).

Bourbaki puts the proof directly after the statement, so what is above is the statement and its proof together.
